:: In the headliner, a lot of public money is surprisingly coming in on Cain Velasquez. Brock Lesnar opened at -160 and has moved to -140, with Cain creeping towards even money at +110. If you’re with the majority of the public money and like Cain, take the +120 here. If you think Brock isn’t losing this one, grab him at -140 here.

:: We’re pretty excited about Jake Shields‘ UFC debut. He’s ranging from -220 to -260 at the major books now. If you’re on the bandwagon, take the -220 here. If you think Martin Kampmann isn’t getting enough credit, then it’s +200 here.

:: Finally, we swore we’d never bet on Matt Hamill in any scenario ever again. And like Cush’s dad, our word is as strong as oak. So even though it pains us, we’ll take Tito Ortiz and his +145 and not look back here.

Tito Ortiz will be attending the UFC 121 press conference on Wednesday.UFC heavyweight champion Brock Lesnar, No. 1 contender Cain Velasquez, undercard fighters Jake Shields, Martin Kampmann, Matt Hamill and Tito Ortiz, along with UFC President Dana White, will all meet the media on Wednesday at the UFC 121 pre-fight press conference. And if you can’t be there at the Walt Disney Concert Hall in Los Angeles, you can watch it live right here at MMAFighting.com.

The press conference is open to the public, and it will be a good opportunity to see how the fans in Los Angeles react to Lesnar and Velasquez. Although Lesnar is the UFC’s biggest draw, he’s something of a villain to many fans. Velasquez, on the other hand, is a quiet, soft-spoken and likable guy who has been marketed heavily in Southern California by the UFC. So expect Velasquez to get the cheers from the crowd.

The press conference begins at 5 PM ET and the video is below.

If you didn’t catch today’s UFC 121 press conference, you didn’t miss a whole hell of a lot more than the usual answers to the usual questions, but there were a few interesting tidbits revealed by UFC president Dana White including that he will be travelling to New York tomorrow to discuss some movement in the sanctioning of MMA in the hold-out state and the fact that he considered giving Jake Shields a title shot in his first UFC fight based on his record and accomplishments outside the Octagon.

Reflecting off of another, "Do you see MMA in the Olympics in the future?" question he was lobbed at the presser, White explained that things in New York are "moving faster than [he] could have imagined" and that he will be meeting with some unnamed individuals in that regard on Thursday.

It’s pretty easy to be eclipsed by Brock Lesnar’s celebrity and drawing power. Such is the magnetic force of the UFC heavyweight champion that aside from his fight with No. 1 contender Cain Velasquez, not much else on the UFC 121 card, which takes place this Saturday at the Honda Center in Anaheim, California, is receiving much attention.

If you’re not an MMA fanatic, you might find yourself surprised to discover that along for the ride on UFC 121 is former light-heavyweight champion Tito Ortiz, who is facing Matt Hamill in one of the night’s featured bouts.

Yet in some ways, “featured” is not the appropriate word. Without question, Ortiz’s bout is generating the least attention of any fight he’s participated in since 2005, or roughly since the company shot itself into the mainstream sports conscious with its launching of The Ultimate Fighter franchise.

Even in the fanatical MMA community, where Ortiz has been an A-list star and needle-mover for a decade, interest is muted, an interesting development given the fact Ortiz could be facing a must-win situation to stay employed.

Randy Couture celebrates his win at UFC 118.LOS ANGELES – When it comes to assessing a fight between Brock Lesnar and a smaller heavyweight with college wrestling credentials, Randy Couture may be uniquely qualified. He’s been there himself, even if it didn’t turn out how he’d hoped.

That’s why it’s interesting that when he looks at the match-up between Lesnar and Cain Velasquez at UFC 121 on Saturday, he sees a challenger with a very good chance at victory, despite the significant size disparity.

“Cain’s definitely going to give Brock a go,” Couture said Tuesday at the EA Sports MMA launch, adding that the fight was a difficult one to predict.

“It’s an interesting match-up. Both guys have great wrestling backgrounds, and I know from my own experience that my toughest fights were against guys with good wrestling backgrounds. If [Velasquez] can stay away and not end up underneath Brock early, not take any serious damage there, the longer it goes the better it is for Cain. He’s one of those guys at that weight class who has an unlimited gas tank. He’s not going to get tired.”
