Over the last two-and-a-half years, Nick Diaz has found a quality that eludes all but the best fighters: consistency. With all of the various methods of attacks and permutations that lie within them, MMA can be a terrifyingly dizzying sport in which to participate. Yet Diaz seems to have made the leap to where he has an innate feel between himself and his opponent, leading to an eight-fight win streak.

The Strikeforce welterweight champion attempts to defend his belt for the second time, this time against Evangelista “Cyborg” Santos, a fighter whose record does not necessarily match his fearsome style. “Cyborg” is a throwback in the sense that he cares little about planning or technique, often letting his fights devolve into battles of attrition, and for that, he’s become a favorite among hardcore fans who appreciate that type of old-school mentality. Among more mainstream fans, Santos is hardly known. Even in a sport like MMA where records are not the only report card on a fighter’s career, Santos’ 18-13 mark has him underappreciated by many who see that type of number and automatically think “journeyman.”

Because of that, Diaz is a heavy favorite to beat Santos at Strikeforce: Diaz vs. Cyborg.

SAN JOSE – Unlike recent Strikeforce conference calls, there was no rancor and not even the hint of a rant when the fighters gathered for a subdued press conference to promote Saturday night’s Strikeforce: Diaz vs. Cyborg event at the HP Pavilion.

Welterweight champ Nick Diaz expressed admiration and respect for the challenger, Evangelista “Cyborg” Santos, as well as for Santos’ wife, women’s 145-pound Strikeforce champ Cristiane “Cyborg” Santos, who was also in attendance.

“I think he’s a great fighter,” Diaz said of the male “Cyborg.” “He’s better than the other guys they had in line.”

SAN JOSE – Herschel Walker made two things very clear at Thursday afternoon’s pre-fight press conference at the HP Pavilion: 1) he is totally, fully invested in his MMA training, no matter what skeptics might think, and 2) he owns a “chicken company” that somehow doesn’t get any press even with all the media attention on his second pro fight this Saturday night at Strikeforce: Diaz vs. Cyborg.

“I have a food company. I don’t know if you all know that but you need to write that up,” said Walker. “I have a chicken company that sells to Sysco. It’s the largest minority-owned chicken company in the United States. I have over 600 employees. I’m serious, you need to write that down.”

The point is, the reason the 48-year-old waited so long to get involved in MMA wasn’t because he wasn’t interested, Walker said. It’s just that he was busy with his company, Renaissance Man Food Services, and he doesn’t believe in doing anything just a little bit. That’s why he told his employees that if they called him while he was training at AKA that they would be summarily fired, and also why he’s spent the better part of the last year living in a hotel just to be near the gym.

At 48 years old, Herschel Walker is still looking for ways to challenge himself. On January 29, he’ll be back in the cage for the first time in one year, facing Scott Carson at Strikeforce: Diaz vs. Cyborg.

Walker doesn’t have any grand plans on fighting beyond that match, choosing to see how his learning progresses, but surprisingly, he may have his eye on another sporting venture. The former football superstar has designs on a possible NFL comeback.

“I know I can play,” Walker said on a Monday conference call. “If I continue to stay in the shape I’m in now, I know I can play when I’m 50. Right now, if you asked if I can play today, there’s absolutely no doubt in my mind I can play football today, that I can help out a team today.”

Ask most fighters about their plans or strategies for an upcoming fight and you’ll usually get a vague response or no response at all, but don’t count Strikeforce middleweight champion Ronaldo “Jacare” Souza among that group.

When Souza was asked this week about his planned method of attack against upcoming challenger Robbie Lawler, he had no qualms about tipping his hand.

“The plan is to use my jiu-jitsu to bring to the fight,” he said through an interpreter. “I don’t know how or when I’ll bring it to the game but I’m well-prepared, my cardio’s up and I’m ready to go there and show that I’m 100 percent ready to go in and fight. But the plan is when I see the right time, bring jiu-jitsu to the table and use it.”
